dinner done right
1st course

our new cutting board from costa rica- inlaid woody goodness

sourdough, smoked herring, arugula, lemon

main event: what's in the fridge frittata

roast veggies (we choose crimini mushroom, asparagus, potato, cauliflower, onion) in 400* oven for about 25 min until golden brown and potatoes are fork tender. veggies were tossed in olive oil, s&p and a bit of curry powder.
beat 6 eggs with 1 c. milk, 1/2 c. cheese (we did a aged parm and sharp cheddar mix), s&p and about 5 large shredded basil leaves. put roasted veggies in 8in oven safe, non-stick skillet.
pour egg mixture on top and cook at low heat for about 15 min. until just the top is slightly loose. put under broiler for aprox 2 min or until the top is golden and is no longer loose....don't get me started....

cool for about 4 min. use a spatula around the edge of the skillet to loosen. flip over on a plate and serve with some toast and/or green salad.

so damn good. this was the first frittata we've ever made and not the last. perfect for breakfast, lunch or dinner...well anything in between.
*we used a donna hay recipe as a guide but took our own spin. all veggies came from our farm basket*

morning glory muffins
i adapted and renamed this from a gourmet magazine recipe (RIP) and think it's the perfect way to start a sunday morning. the smell in the kitchen while these bake is amazing. brew a little coffee, squeeze some fresh orange juice, break out the sunday Times and start the day right.
preheat oven to 350°F and oil muffin tins. i prefer "muffin tops" (the only good kind of muffin top) which are shallow and wide vs. the small and deep most people use.
into a large bowl sift together 2 c. flour, 2 t. baking soda, 2 t. cinnamon, and 1/4 t. salt and whisk in 1 c. brown sugar and 1/4c. white sugar.
coarsely shred enough carrots (i used purple carrots from my farm box) to measure 2 cups and 1/2 c. chopped pecans.
add shredded carrots and pecans to flour mixture with 1/2 c. golden raisins (or regular thompson's if that's what you've got) and 1/4 c. unsweetened coconut and toss well.
In a bowl whisk together 3 eggs, 1 c. vegetable oil, and 2 t. vanilla.
core 1 apple (i used a pink lady, also from my farm basket) and coarsely shred. Stir shredded apple into egg mixture and add to flour mixture, stirring until batter is just combined well.
divide batter among muffin cups, filling them three fourths full, and bake in middle of oven until puffed and a tester comes out clean, 15 to 20 minutes.
cool muffins in tins 5 minutes before turning out onto racks to cool completely. muffins keep in an airtight container at room temperature 5 days or can be frozen.
recipe makes 14 muffins

On Saturday, August 1, 2009, Long Beach Organic, Inc. in collaboration with private property owner and local business woman (SISco Business Services Inc.), Annette LaBarca, City of Long Beach’s Neighborhood Leadership Program team – Waves4Change; Wrigley Association and the Long Beach Redevelopment Agency invite you to break ground for Wrigley’s first community garden.
The highly anticipated Wrigley Village Community Garden will be located at 2044 Pacific Avenue in the heart of the Pacific Corridor. This grass roots celebration will complement the City of Long Beach’s own extensive redevelopment efforts to improve Pacific Avenue through the Wrigley Village Streetscape Project.
The Wrigley Village Community Garden celebration kicks off at 10:00 am and will feature a ribbon cutting ceremony at 11:30am. Many local dignitaries and city management will be present as keynote speakers. Festivities will include opportunity drawings, music, kid’s activities such as “stepping stone painting” and a ‘how to’ seed starting demonstration. Renee’s Garden Seeds and Botanical Interests will provide complimentary seeds for the kids.
