cobble cobble

between our farm basket, produce trade show and family visiting, we have fruits and veggies blowing out of our fridge. i've been trying to cook/eat it all before it goes bad. first was a grilled veggie lasagna which was colorful and delicious. last night was plum cobbler based on my grandma's recipe that is the BEST.

usually i make the cobbler in a square baking dish but due to lack of milk, i halved the recipe and made it in individual ramekins.

here's the recipe in full: it's fool proof and wonderful with any fruit..frozen or fresh.

1 c. milk
1 c. sugar
1 c. flour
1 t. baking powder
pinch of salt
3/4 cube of butter
fruit- equivalent of two baskets or one frozen bag-10 oz. aprox
more sugar for sweetening fruit if needed

-combine the first 5 ingredients in a bowl and mix until lumps are gone
-heat butter in glass baking dish over stove on medium-low until butter is completely melted
-mix fruit with additional sugar if needed in separate bowl
-take baking dish off the heat and add the batter. blend the two with a fork until the butter is completely incorporated in the batter
-sprinkle fruit on top of cobbler batter evenly
-bake @ 350* for about an hour or until the edges are golden and the center is firm
(the browned edges are my fav!)

this is easy, easy, easy and always a big hit with the friends. frozen blackberries are a stellar combination as well as fresh peaches in the summer. use your imagination and try!
